An evening where Caribbean warmth meets refined dining.
On a warm summer afternoon by the water, we hosted Rum & Dining with Barceló a dining experience built around flavor, rhythm, and connection. Featuring the Dominican rum brand Ron Barceló, forty-five guests joined us at Restaurant Vadevi’s for a five-course dinner celebrating Dominican craftsmanship and culture.
Each course was paired with a different rum from the Barceló range, showcasing the depth and diversity of Dominican artistry. Among the highlights were two unforgettable serves: Barceló Onyx, bold and full of character with warm hints of cherry, coffee, and oak; and Barceló Imperial, smooth yet complex, with layers of vanilla, coconut, and subtle spice. Both rums shaped the evening each cocktail crafted to reflect their unique personality and to enhance the dishes they accompanied.
The menu guided guests through a summer-inspired journey of flavor, beginning with spicy pineapple tartare with cassava and cress, followed by sea bass ceviche with salty fingers and lime gel. The evening continued with smoked salmon mousse with raw salmon tartare and smoked dill mayonnaise, leading into the confit duck with mousseline, carrots, and port gravy, and closing on a rich note with orange and various preparations of dark chocolate.
As the sun set over the water, laughter and conversation filled the air. Guests discovered how rum could elevate every course, each cocktail adding a new layer to the story. The relaxed rhythm of the Caribbean met the elegance of fine dining a perfect mix of culture, craftsmanship, and connection.
